All our Bread Courses at the Food Hub our run by the fabulous Sue Hudson of Bread Workshops. Sue has been a guest chef at the Food Hub for 4 years and brings her fantastic range of seasonal bread workshops to our cookery school throughout the year.
Sue is passionate about the importance of a good, healthy diet using the best possible ingredients. Sue teaches the craft of artisan bread making. A passionate bread baker, Sue knows that the best way to learn is the ‘hands on’ approach, using quality locally sourced ingredients wherever possible, ensuring that her new bakers will dispel the myth that making bread is difficult.
What can you expect from a bread course?
Sue’s Bread workshops run from 10.30am until 3pm. You will be welcomed with Tea & Coffee and homemade cake in our dining room where you will meet your fellow bakers for the day. At 10.30 you will enter our purpose built kitchen where you will work at your own station with the rest of the group. For our Bread Workshops there are a maximum of 12 attendees per course. Sue will guide you through up to five different recipes per course. This course will be a fully hands on experience and include all the ingredients, equipment and refreshments. We use a great range of Kenwood Appliances and Rangemaster ovens so you can be sure of some great results. You can expect to take home 4 loaves that you will have crafted with your own hands along with kraft recipe cards, so you will be able to replicate your success in your own kitchen. The course includes a delicious lunch that consists of homemade soup followed by quiche, sausage rolls and a selection of seasonal salads. Naturally you can expect to enjoy plenty of freshly baked bread too!
Who are Bread Workshops for?
Our courses are specifically designed to suit all abilities from novices to experienced home cooks. We have a Beginners Bread workshop as well as an Introduction to Sourdough, alongside a host of enriched dough and seasonal workshops. We find our Bread Workshops attract a wide ranging audience of all ages so you will be sure to meet a bunch of lovely people with shared enthusiasm for bread.

Using fresh, seasonal and quality ingredients is at the heart of our ethos at Food Hub Suffolk. For our Bread Workshops we use Marriages Flour. Marriage’s has been producing superior quality flour since 1824, sourcing English wheat from local Essex farmers where possible, including from the family’s own arable farms only a few miles from Chelmer Mills.
What Bread Workshops are offered at the Food Hub?
Beginners Bread Workshop
Baking is simple, all you need is flour, water, salt and passion. Come on our introductory bread making course to find out more. Enjoy this informal, hands-on bread making workshop with Sue, who will show you how to achieve perfect home made loaves and master the techniques of baking delicious bread. Sue will guide you through each stage, mixing, kneading, shaping and finishing these glorious breads. You will take home baked delights including Split Tin Loaf, Malt loaf and a lot of bread skill.
Introduction to Sourdough
Whether you are completely new to sourdough, or want to know the secret behind baking successful sourdough bread then this course is the perfect place to get started and get hands-on feedback. Working with sourdough can be a difficult skill to master but you’ll be guided through choosing the right ingredients, kneading and shaping the dough and how to get the right results in the oven. This workshop is designed to take away your fears and show you how you can make successful sourdough in your kitchen at home. You will fearlessly bake two loaves during the day, create your own sourdough starter and start a loaf to finish at home.
Bring your beloved to this Valentine’s day bread workshop and share magic moments baking sweet almond and cardamom love knots, heart shaped wreaths and decorated savoury spelt plaits. The final recipe is a Danish “twist” bread. Baking with your partner is great fun, so come along to learn some new skills and spend time together in the kitchen.
Enriched Dough Bread Workshop
This is an enriched dough bread workshop for Mother’s Day and has an emphasis on creating several impressive loaves and rolls both savoury and sweet. Enriched bread are typically enhanced with good stuff in addition to the bare essentials of flour, yeast, salt, and water, and contain eggs, sugar, milk, butter and sometimes olive oil. Think golden brioche, medieval Manchet buns, Devonshire splits or Challah with extras, get stuck into some serious braiding techniques. Suitable for all abilities, complete novice bread makers and serious bread fiends alike!
Easter Bread Making
Delicious Easter Bread making day, in addition to the inevitable Bread Workshops Hot Cross Buns (you will take home a dozen of these!) we have treats such as Easter European Paska Loaf, wicked chocolate bread, cinnamon breakfast buns, and cheesy monkey bread.
Italian Bread Workshop
Sue will guide you through some of her favourite italian bakes. Learn to make fabulous Neapolitan pizzas the Italians way, follow with bread from across Italy– extra special focaccia, ciabatta, cheesy olive sticks to share or grissini for dipping and crunching with a large glass of Chianti.
Festive Bread Workshops
Picture waking up on Christmas morning to the beautiful aroma of warm, fruited cinnamon plait bread. Share soft and lemony impressive Pandoro star cake with tea or coffee and friends over the festive season. Quickly knock up a spiced soda bread to eat with lashings of cold butter after a traditional walk. Recover from the rich feasting with Boxing day soup and a cheesy wreath to share. Our hazelnut, orange and chocolate tear-and-share bread is a great way to finish dinner with guests. Get ahead with your Christmas baking, these breads are perfect to freeze ahead and gently warmed before serving will add to the deliciousness.
