Field to Fork Game | Saturday 23rd October | 10am- 3pm
Learn how to prepare and cook a range of feathered game as well as venison on our game cookery course. We will teach you all the preparation and kitchen skills you need to get the most out of wild meat. We have designed the course to take full advantage of in-season, locally sourced game. You will learn how to skin, joint, pluck and draw a variety of game birds, before using the meat in our cookery school kitchen to create a range of tasty dishes.
Recipes on this course may include:
- Pigeon, Blackberry and Beetroot Salad
- Venison and Mixed Game Wellington with Mushroom and Apple
- Rabbit Cacciatore
- Moroccan Pheasant Pastilla
The course will run from 10.00am until 3.00pm and includes practical and demonstration cookery sessions, lunch and refreshments. All the ingredients, equipment and the recipes for the day will be provided.
